Show Us Your Life-Desserts


Oh, this is a hard week. If you know me at all, you know that I LOVE LOVE LOVE dessert. Sooooo, I am going to cheat and post two recipes :) I can do that since this is my blog. Oh, the power! As I sit here eating my pickles out of a jar (more on that to come later), I am going to share some powerful stuff with you all. First I am going to celebrate the season and give you my favorite fall/winter treat. It is a pumpkin cake roll and my momma makes it every year. One with nuts for all those who like them and one without for.. well ME! I sometimes share with Lance and Matt. It's a very rare occasion. The great thing about this particular recipe is that not only can you eat it for a dessert, you can have it for breakfast too.


Ingredients for the cake:
3 eggs
1 c sugar
2/3 c pumpkin
1 tsp lemon juice
3/4 c flour
1 tsp baking powder
1/2 tsp salt
1/2 tsp nutmeg


Ingredients for the icing:
1 c powdered sugar
6 oz cream cheese
4 TBSP butter
1/2 tsp vanilla


Beat the eggs on high for 5 minutes gradually adding the sugar. Fold the pumpkin into that mixture and add the lemon juice.



In a separate bowl mix the flour, baking powder, salt, and nutmeg. Add to the above mixture (wet mixture).


Spread onto a greased/floured 15x10x1 baking sheet. Bake at 375* for 15 minutes. Immediately turn cake onto thin cloth that is covered in powdered sugar. Roll it into the towel and let it cool completely.


While cake is cooling, mix together the ingredients for the icing. Once the cake is cool, unroll it and add the icing. Roll it back up and it should look like this:


The second recipe is one of my faves throughout the year. I didn't want to leave y'all with something seasonal, because a love of desserts doesn't just come around occasionally. This is from my cookbook called The Lady & Sons Just Desserts. If you don't have this cookbook and like desserts, you must get it! You know it is a good cookbook when most of the pages are splattered with batter!

It is her Gooey Butter Cake recipe, and what I love about this recipe is that you can add just about anything to it to make it your own and it is fabulous. For now I am just going to do the plain recipe.


CAKE:

1 18.25 oz box yellow cake mix

1 egg

1/2 cup (1 stick) butter, melted

FILLING:

1 8 oz pkg cream cheese, softened

2 eggs

1 tsp pure vanilla extract

1 16 oz box confectioners' sugar (powdered sugar)

1/2 cup (1 stick) butter, melted



Preheat the oven to 350*. Lightly grease a 13x9x2 inch baking pan. In the bowl of an electric mixer, combine cake mix, egg, and butter and mix well. Pat into the bottom of prepared pan and set aside. Still using an electric mixer, beat cream cheese until smooth; add eggs and vanilla. Dump in confectioners' sugar and beat well. Reduce speed of mixer and slowly pour in butter. Mix well. Pour filling onto cake mixture and spread evenly. Bake for 40 to 50 minutes. You want the center to be a little gooey, so time may vary with different ovens.

My mom always adds powdered sugar sprinkled to the top, but I don't because Matt and I always choke on it. I don't know why but apparently we breathe in before we take a bite??? haha

Pumpkin rolls are the epitome of Fall desserts! I have made pumpkin bars but not the roll so I will have to take note of this recipe!

btw, congrats on your little one! I am 12 1/2 weeks with our first (though I have one more week to go before I tell the fam so shhhh!).

I just had to laugh when you wrote about the pickles. I bought this huge jar of baby dills at the store on Monday and they are already almost gone! Good thing my hubby doesn't like dills, but even if he did, they are ALL MINE!! I think pickles do the trick because the saltiness soothes the tummy??
